Premium charcoal with long burning time, low smoke and stable heat.
White charcoal is hard, long-burning and temperature-adjustable. It is made by slowly carbonizing raw materials such as eucalyptus, maitieuw wood, longan wood, coffee wood and pomelo wood in a charcoal kiln. Air is then blown into the kiln and the charcoal is fired above 1000°C in a finishing process called “nerashi”, before an ash-and-sand mixture called “sohai” is poured over it to extinguish the fire quickly. White charcoal is as hard as metal, difficult to ignite and may crack or pop if heated suddenly, but once stable it burns for a long time and the temperature can be adjusted from low to high with a fan. Domestic binchotan is used by premium restaurants around the world.
